Veggies and Creamy Tomato Sauce
HEY! HOPE ALL IS WELL!
Todays meals were filled with lots of veggies and ended with a great sauce.
I started the day with my oats and coffee
Breakfast


After breakfast I headed to the gym and did a light cardio workout.
I alternated between running for 5 minutes and walking for 5 minutes on the treadmill for 60 minutes.
It wasn’t my toughest workout, but it got me moving and my heart pumping
Lunch was filled with lots of veggies…

Vegetable Sandwich and a Pear

What the sandwich included…
Tomato
Cucumber
Sprouts
Avocado
Onion
Soy Cheese
Mustard
Vegenaise
I love sandwich’s that are packed full of veggies, super good!
I haven’t been feeling the best today (that time of the month, sorry for the TMI), so I wasn’t feeling veggies or fruit for a snack.
I opted for a small cup of cereal…about 3/4 a cup around 4:30PM

Dinner tonight was something I sort of whipped together with my imagination…
I love creamy red sauce, but since I am lactose intolerant I can never really eat it.
So, I decided to come up with a vegan and diary-free friendly creamy red sauce

I first started off by boiling some water and throwing in some organic brown rice pasta

The ingredients used in the sauce…

1 cup tomato sauce
1/4 cup soaked cashews
2 garlic cloves
2 TBSP nutritional yeast
1 TBSP tomato paste
Pinch of black pepper
Throw everything together in a blender and blend until smooth!
After pasts is cooked, poor on top of pasta and stir together…

Then enjoy with a side of steamed broccoli!

Quick. Easy. Healthy. Delicious
Off to enjoy some tea, hope your day was great!

Stir-Fry and More
Hey, how was your Monday?!
Mine has been pretty relaxed…
I started my day off with the usual…
Breakfast

Oatmeal and Coffee
After breakfast I had a meeting to go to, then came back and did some Yoga.
I completed 40 minutes of Yoga from Bethenny Frankel’s DVD.
It’s definitely one of my favorite yoga DVD’s.
After that I re-heated the soup from last night…
Lunch

Tomato Soup+ Whole Wheat Bread+ Almond Butter+ Jelly
I took Pete for a walk later in the afternoon and also had a snack…
Snack

Organic Apple with Cinnamon
For dinner I planned some Tofu Stir Fry…
Dinner
Veggies cooking on the stove…

I also cut up pre-packaged tofu from Trader Joe’s.
Then I made my own teriyaki sauce…

1/4 cup soy sauce
2 TBSP Brown Sugar
Ginger
Garlic
1 Cup Water
2 TBSP Corn Starch+1/4 Cup Water
Add everything together over medium/high heat and continuously stir until thick…
Pour over veggies and a bed of brown rice, dinner is served!

It was super good!
I am going to finish dinner off with a cookie from last night

HOPE YOU HAD A GREAT SUNDAY!!
I decided to post-pone yoga until tomorrow, and headed to the gym for some cardio.
Before the gym I had a snack…
Snack
Organic Berries+Banana+Almond Milk+Vanilla
While at the gym I completed 25 minutes on the elliptical and 25 minutes on the bike, followed by some stretching.
Then it was cooking time.

Home-made Tomato Soup
Veggie Broth+Tomatoes+Onion+Garlic+Bell Pepper+Spices

It was delicious and just what our Sunday night needed

Dairy Free Chocolate Chip Cookies

I had two hot out of the oven…

So yummy!
I just googled a regular recipe and altered it to be dairy-free. I made it with half white/wheat flour, vegan butter, organic egg whites, and vegan chocolate chips. In order to make them a bit more healthy, I also cut the sugar and butter content in half…they still turned out great!
So many t.v shows on tonight, so little time
Off to watch Mob-Wives, Cup-Cake Wars, and Housewives!!!

Farmers and Ledges
HAPPY SUNDAY!
This morning the hubby and I made plans to go to breakfast and a movie.
We decided to go to ” Friend of a Farmer” for breakfast.
We have been eyeing it for a while now, so we were excited to try it!

I ordered the French Toast…

They were yummy! It was cinnamon raisin bread, even better!
(I finished 2 of the 4 slices)
The hubby had the waffles…

He loved them!
We still had some time to kill before the movie, so we headed next door to grab a coffee…

I ordered a Soy Latte…

Beautiful Right?!?! I seriously love coffee drinks like this, so pretty and tasty!
After coffee we headed to the movies.
We saw “Man on the Ledge“, it was pretty good!
It definitely kept you on your feet and was a thrilling movie.
Even better, the hubby had two free move passes!
After the movies we walked to Trader Joe’s and picked up groceries for the week.
Once home I made myself some lunch…

Brown Rice Tortilla with Hummus and Soy Cheese+Pear
Easy and delicious!
I am going to make some soup tonight for dinner and possibly whip-up some vegan cookies
Off to go do some yoga, see ya later!
