Tempeh, Sauce, and Noodles
HAPPY HUMPDAY!
How are you doing, I hope well!
My friend Jess is back in town this week so I have been hanging with her and enjoying the city.
Yesterday I started my day off with the usual yummy breakfast…
Breakfast
Oats and Coffee

Always so yummy and filling.
I think one day I may turn into oatmeal, I just love it so much
As far as my workout, I decided to make it a treadmill day.
Workout
60 minutes on the treadmill.
30 minutes @ a run pace 5.7-6.0 MPH
15 minutes @ sprint pace 6.7- 7.5 MPH
5 minutes @ a cool down pace 4.0 MPH
After my workout I made myself a salad for lunch.

Organic Green Salad

A few hours later I went for a small snack.
Snack: Organic Pear
Dinner was one of my favorite’s and the hubby loves it too!

Tempeh Whole Wheat Spaghetti

In the mix goes…
Tempeh.
Mushrooms.
Onions.
Tomato Sauce.
Herbs.

On a bed of whole wheat pasta and side of asparagus.
I ended my night with one of these…

Childhood Favorite
HAPPY TUESDAY!
How are you doing?! I hope everything is going well
Yesterday was a great day here in NYC, the weather was amazing. I definitely wanted to take advantage of the beautiful weather so I went on a run along the Hudson river. It’s so surreal to be able to run along the Hudson river and look at the city sky line along with Lady Liberty, I am one lucky gal!
My run lasted about 1 hour and 30 minutes then I came home and played with Pete in the hall. He is a little tennis ball obsessed so everyday we play fetch in the hallway. The neighbors now know him as the tennis ball dog haha
Such a little goober, love my baby!

After we played in the hall I made myself a quick-lunch…

Organic Green Salad and Raisin Bread
Both tasted delicious, especially the raisin bread warmed with a little honey. YUM!
I recently made a trip to Whole Foods and found these fantastic vegan biscotti’s. I ran out of them the other day and decided I would try to make my own from home and I think I succeeded!
Vegan Almond Hazelnut Biscotti
I started off by mixing the dry and wet ingredients separately.
Dry: 1 cup whole wheat flour, 1 cup all-purpose flour, 1 tsp baking powered, 1/2 tsp salt
Wet: 1/2 cup unsweetened apple sauce, 1/2 cup sugar, 2 tbsp oil, 1 tsp vanilla, 1 tsp hazelnut
Then add together and mix.
Once you have mixed, add roasted almonds to the mix (1/2 cup)
Then form dough into long log on oiled pan.

Bake at 325 for 25 minutes.
Allow to cool for 15 minutes, then cut diagonally to form the biscotti shape.
Turn cookies onto side and cook for another 7 minutes. Flip to the other side and cook for an additional 5 minutes.
ENJOY!

Tomato Soup and Grilled Cheese
I started off by roasting fresh tomatoes and onions with a dash of olive oil and herbs


After they roasted for about 20 minutes at 400 I put them in a pot with vegetable broth and garlic.
I brought the soup to a boil and then simmered for 30 more minutes.
Once complete I threw everything into the vitamin blender, viola!
I made the grilled cheese by using earth balance and soy cheese, then grilled it on the George Foreman!

Such a great home-cooked and healthy childhood favorite! It was awesome to dip the grilled cheese in the soup, yum!
I ended the night with some tea and my freshly made vegan biscotti!

Weekend Adventures
How was your weekend?!?
Jake, Pete, and I had a fun weekend!
Here is a quick recap…
Unfortunately Jake had to work on Saturday so I spent the day with Pete and took him to the dog park. After the dog park I headed over to the Union Square Farmers Market to browse and maybe pick up some stuff.
I picked up these two yummie treats…

And I definitely had a slice of bread later on for a snack…

And my gosh, so good! So fresh

Dinner was on your own night, so I just whipped up something random and didn’t take a photo, sorry
As far as Sunday goes, the hubby and I had a hot date with breakfast and a movie!
We went to one of my favorite vegetarian spots for breakfast…
The Organic Grill
I was so excited and hungry for food that I forgot to take a picture haha
But, I ordered their Tofu Burrito with a side of potatoes! It was super good, even the hubby loved it and that’s saying a lot for someone who claims to “hate” tofu. I also ordered a vegan coffee frap, amazing! I love breakfast spots like these, so many fantastic vegan options
After breakfast we walked over to the movie theater and saw Safe House.

It was definitely thrilling and fantastic movie. You can’t go wrong with Denzel and Ryan, definitely great choices for actors
After the movie we walked over to Trader Joes. Yesterday was definitely filled with walking everywhere, we probably covered a good 5 miles going from place to place. By the time we got home it was 3 or so. I wasn’t super hungry because we had a bigger breakfast, but definitely wanted something small to tide me over until dinner so I opted for some cereal. PUFFINS!
You can never go wrong with cereal right?! I topped it with some cinnamon and banana.
Dinner was a black bean veggie burger…

They turned out great!

Rain, Veggies, and Sweet Treats
TGIF!
So excited for the weekend and being able to spend it with my boys, we have some fun plans for the weekend including a movie and brunch
Back to today though, it has been raining all day here in the city booo! Hopefully it won’t last long though because we want to take Pete to the park tomorrow and pass by the farmers market.
This morning I started off with the usual…

After breakfast I had a bit of laundry to do because Pete wasn’t feeling to hot last night and his dinner ended up all over his blanket

I then completed a 40 minute Yoga DVD, which felt really relaxing after last nights intense Zumba class

Around 4:00PM I had a snack that would tide me over until dinner and not leave me starving while going out to eat, which is always a bad idea…

Everything was amazing as usual, I can never get sick of Lantern, best place ever!
The night ended with these amazing treats that we will share later while watching T.V

Vegan Chocolate Cupcake and Peanut Butter Cookie

We picked up these bad boys from a place called Terri’s, which is an all vegan cafe. It was my first time there, but I will definitely be going back because they had awesome food options. That is definitely something I am going to miss when we move back to SD, all the AWESOME vegan options here.
