HEY EVERYONE!!! TGIF
I am finally back in action.
After a lot of thought, debates, sleepless nights, deposits, and stressful days… I have finally decided on which nursing school I will be attending this fall! The struggle with this decision was tough because the two schools I was deciding between are vastly different.
The first school was an “Ivy League” school and a place I always dreamed of attending. It is located here in NYC, which is something I had also always dreamed of. Living in NYC and attending my dream “Ivy League” school. But, with that name comes a LARGE price tag. I know they are able to offer students many opportunities, but I couldn’t ignore the fact that this school was $40,000 more than the other school. The other school is located back in CA/San Diego where all my family and friends are, and like I said, is $40,000 cheaper. That also doesn’t even include cost of living/flights home, which we know is triple in NYC. The school in San Diego is a smaller program and maybe not such a well-known school, but still rated within the top 250 nursing programs in the U.S. Logistically this school in SD made the most sense; Money, Family, Friends, Networking, Husband, etc. I tried to ignore that for some time, but in the end I KNEW what was better for my husband and I’s future. At the end of the day would I prefer the “Ivy League” education? YES! But, at the end of the day would I prefer to be less in debt and stress free during/after school? YES! And I think the latter portion plays more weight in our lives, so I knew San Diego was the best choice. I am very sad to let go of my dream of attending this school in NYC, but I know 3 years from now when I am not in debt $100,000 and with family/friends I will be happy with my decision. So, San Diego I am coming back!
Now, back to some yummy food
Yesterday morning I decided to make my favorite pancakes…
Breakfast

They were super fluffy and delicious. The perfect pancake combo!

Yesterday I spent most of the day cleaning. In a weird way, cleaning is a great distraction when anxious and stressed lol…
Lunch
1 Organic Egg+1 Egg White+Veggies+Salsa+Nutritional Yeast+Sweet Potato

I am really in a sweet potato kick. I just love them baked with a dash of cinnamon, so good!
My workout yesterday was my awesome Zumba class! (Something I am definitely going to miss when we move, I love the teacher!)
I always leave that class drenched in sweat and knowing I just had a stellar workout.
I got home around 8:00PM so I needed something on the quick side for dinner. Thursday’s are also usually on your own night, so the hubby had already eaten some pizza. I turned to my favorite frozen meal, Amy’s!

Tonight the hubby and I are trying a new restaurant called Blue Smoke, it’s suppose to be awesome! We are certainly going to take advantage of these last few months in NYC and try some amazing restaurants!

Have you ever made sweet potato fries with cinnamon sprinkled on top? They are delicious!
