Tofu Scramble and Falafel Burgers

Happy Monday!
It was absolutely beautiful today in NYC, spring/summer is definitely around the corner
This past weekend was filled with lots of great stuff, including an awesome St. Patty’s day which I posted about earlier.
In addition to that, the hubby and I went to see 21 Jump Street. It was AWESOME! So funny. I would definitely recommend you to see it, plus…Channing Tatum is in it, can’t get better than that

This weekend I also made a dish I have been wanting to try for some time…
Tofu Scramble
I had it at a vegan restaurant a few weeks ago and it was amazing, so I thought I would make it at home.
Ingredients
- 1 package firm tofu
- 1 bell pepper
- 1/2 onion
- 1 cup spinach
- turmeric
- cumin
- garlic
- salt
1. I sautéed the onions, bell pepper, spinach, and garlic together for a few minutes with non-stick spray. (5-minutes)
2. I then crumbled the tofu by hand and added it to the pan+all the spices.
3. Mix and allow to cook for an additional 10 minutes on low and serve.

Served on a corn tortilla with soy cheese and salsa!
Organic pear on the side.
It was super good and something I will definitely make in the future.

Again, I want to respect Chloe and not give out the full recipe, but it was definitely amazing and I recommend picking up her cook book!
