Blueberries and More

Happy Friday!

Hope your week was amazing! :)

The other night I mentioned that something yummy was baking in the oven, and boy did it taste amazing!

I made a vegan blueberry and walnut loaf from this recipe @dailygarnish!

* I made two different changes; 3 bananas and sucant sugar

It was super moist and delicious. The best part is that it is healthy and all natural!

Today’s lunch was left over pizza from the other night and an organic apple.

I took Pete on an hour-long walk today, along with the dog park… He is totally pooped now!

I also went to an hour-long yoga class, which felt so awesome and I really love this new studio.

Wicked and Pineapple Express

HAPPY HUMP-DAY EVERYONE!

Wednesday’s are always the best because you see the light of Friday staring at you in the distance :)

It was a pretty amazing show, especially on Broadway! I have enjoyed every show I have seen thus far on Broadway; Lion King, Sister Act, and Wicked. My all time favorite has to be Lion King, but I am also a little bias because I love animals and the story of the movie :) But, each one has been amazing and I recommend seeing all of them if you can!

This morning I woke up to my usual breakfast

This afternoon Pete and I headed out on a long walk. It amazes me how he still has energy after an hour-long walk, hyper little dude.

Once home I put together a yummy lunch of : Ezekiel muffin, organic egg, avocado, hummus, veggies, apple, and mini vegan cookie.

* I really love the new Ezekiel Muffins I have found. Super healthy and only 80 calories!

This meal was definitely yummy and filling.

I hit up the gym for a light cardio workout today… 20 minutes elliptical and 20 minutes bike. I was pretty sore from the past few days of attending Yoga everyday so I took it a little easy. I definitely will be back at yoga on Friday to take advantage of the free unlimited week of classes at Yoga Vida, so far I LOVE the studio!

Dinner tonight was AMAZING and filled with PINEAPPLES!

Vegan Pineapple and “Ham” Pizza

 

 

 

 

 

 

 

 

Sautéed onions and “fakin-bacon” in 1 TBSP of olive oil.

 

 

 

 

 

 

 

 

Rolled out dough that I made from scratch using a basic pizza dough recipe, but swapped for wheat flour.

 

 

 

 

 

 

 

 

Add toppings; onions, fakin-bacon, pineapple, basil, tomato sauce, soy cheese.

Baked for 15-18 minutes at 400.

 

 

 

 

 

 

 

 

All done!

It was super yummy and the hubby loved it! Definitely will be making this again soon.

I have something yummy baking in the oven for dessert..it may include blueberries, banana, and walnuts :) Pictures will be posted tomorrow, but I can assure you I will be having a slice tonight for dessert. YUMMM!

Chick Pea and Cooking Feast

HEY EVERYONE!!!

How are you doing?! I hope well :)

Today my stomach has been feeling a little wonky, but by the end of this post you may understand why lol…

First, lets back track a little to dinner a few nights ago…

Chana Masala 

I started off by cooking some long grain brown rice…

 

 

 

 

 

 

 

 

Then diced up some onions and sautéed them…

 

 

 

 

 

 

 

 

Continued to add many different spices (I just googled spices in Chana Masala), along with some garlic…

 

 

 

 

 

 

 

 

 

 

 

Then added these + 1/2 cup water to the dish…

Last night I headed to another cooking class at The Natural Gourmet Institute. 

The class was called Vegan Express, which was based on quick easy vegan meals that someone could cook during the work week. The class was by far my favorite that I have taken and the food was AMAZING!! Really, everything tasted so good and there were a lot of really friendly people in the class, which made it even more fun!

There were so many great dishes like: soba noodles, lentil burgers, curry beans, kale, mushrooms…it was all awesome!

With that said, LOTS of grains and veggies were consumed and today my stomach was a little wonky lol. I am pretty used to eating lots of grains and greens, but last night was a little intense. Next time, I will make sure to only eat 1 dish at a time haha.
